I have found a couple ways to easily and deliciously prepare my CSA Veggies:
Marinate in Italian Salad Dressing and Grill
This works super well for yellow squash, zucchini and green beans. For the squash, cut in half lengthwise then into quarters for smaller squash or into sixths (or even eighths) for larger squash. Marinate in the dressing for 1/2 to 1 hour and then grill (turning once) for about 4 - 5 minutes.
For the beans, you will need a grill basket. Simply wash and marinate then grill for about 4 minutes turning the beans once.
Cauliflower in Pesto
I found this recipe for Grilled Cauliflower Steaks and Pesto at Two Peas & Their Pod and decided to try it with my own homemade pesto. My own pesto was a little thick so I added additional olive oil and grilled away. My cauliflower was not very large so I ended up with 2 "steaks" and 2 smaller pieces (and a remainder of several smaller florets.) DH and I quite liked the flavor!
To make this even easier, I subsequently simply cut the cauliflower into normal size florets, added pesto and wrapped up it all up in foil to grill. You can even simply roast it in the oven if you prefer.
